Ich habe hier die doppelte Menge gemacht, für mehrere Tage
Hauptzutaten:
120g gelbe Linsen
einen halben Block Räuchertofu (ca. 50g)
80g Sellerieknolle
150g Grünkohl
2 rote Zwiebeln
100g tiefkühl Zuckerschoten oder Broccoli
1l Wasser
Gewürze:
2 TL rote Thai Curry Paste
Saft von ½ Zitrone
2 TL Sojasauce
1 EL Apfelessig
1 TL Reisessig
1 TL Senfkörner
Zum Garnieren:
Frischer Schnittlauch
2 EL Hefeflocken und
etwas Sriracha (alles optional)
Zubereitung:
Linsen, Räuchertofu, Sellerieknolle, rote Zwiebeln schnippeln, in einen Topf geben und mit dem Wasser übergiessen. Sämtliche Gewürze dazugeben, zudecken und Herd schonmal auf hoher Temperatur anschalten.
Grünkohl waschen und klein schneiden.
Den Grünkohl und das Tiefkühlgemüse dazugeben, zudecken.
Aufkochen lassen, dann Temperatur runterdrehen und auf kleiner Flamme ca. 45min köcheln lassen, bzw. bis die Linsen durch sind.
Mit frischem Schnittlauch, Hefeflocken und Sriracha garnieren (optional).

Main ingredients:
120g yellow lentils (or yellow split peas)
half a block smoked tofu (ca. 50g)
80g celery root
150g kale
2 red onions
100g frozen sugarpeas or broccoli (or both – why not both?)
1l water
Spices:
2 tsp red thai curry paste
juice of ½ lemon
2 tsp soy sauce
1 tbsp apple cider vinegar
1 tsp rice vinegar
1 tsp mustard seeds
For garnish (optional but very recommended):
fresh chives
2 tbsp nutritional yeast and
Sriracha
Instructions:
Dice smoked tofu, celery root and red onions and put everything including the lentils in a pot. Pour the water in and top with all the spices. Switch the stove on and set to high and cover the pot with a lid.
Wash and cut the kale.
Add kale and frozen veggies, cover again.
Bring the water to a boil, then reduce the heat to medium low and simmer for about 45 minutes, until the lentils are done.
Plate this deliciousness up, garnish with fresh chives, nutritional yeast and Sriracha (optional).
